Bacon, Lettuce & Tomato....Pasta!

If you enjoy the flavor of bacon, lettuce and tomato, then you will love this pasta!

BLT Pasta ~ Serves 6,

1 lb pasta, cooked "al dente"
1 small onion, diced
4 oz chopped bacon, cooked until crisp
1 can (15 - 16 oz ) diced tomatoes
2 garlic cloves
1 Tbsp. capers, rinsed
2 Tbsp. white balsamic vinegar
1/4 cup Parmesan cheese
1/4 cup thinly sliced sharp white cheddar cheese
Olive oil
Sea Salt
Fresh Ground Pepper, Be Generous!
Finely Shredded Lettuce

In a large saucepan over medium setting, heat 1 Tbsp. olive oil until almost smoking.  Add diced onion to pan. Stir constantly for 3 minutes; until soft, but not brown.  Add tomatoes (with liquid), cooked bacon, garlic, capers & vinegar.  Cook for 10 minutes over medium heat, until some moisture has evaporated.  Toss cool pasta in the tomato mixture.  Toss in cheese and olive oil.  Add salt & pepper to taste.

Serve on a bed of shredded lettuce with some chopped bacon.  Don't forget the cheese on the side!
